I am a 40 something wife and mom to three kids who has been gluten free (biopsy diagnosed) since Dec. 1993 when my second child was born. The last part of that pregnancy was a real challenge as I was losing weight daily! But I was so happy that I just had to make a "simple" dietary change...as the doctor said. It took one year for me to become content with this "simple dietary change" and then about 14 more years to figure out the nuances of baking gluten free. I am now putting my time and energy into "Gluten Free You and Me" where producing high quality gluten free bakery items is the goal.
